Preheat the oven to 200 degrees. Cover the baking tray with baking paper.
Rinse the chickpeas in a sieve and drain.
Spread the chickpeas on the baking sheet and sprinkle with some salt and paprika. Place the chickpeas in the oven for 15 minutes. Then flip and bake for another 10 minutes.
Meanwhile, prepare the couscous according to package directions.
Peel the onion and cut into half rings. Wash the tomato and cucumber and cut into cubes.
Add the tomato, cucumber and onion to the couscous. Season with olive oil, salt and pepper and stir well.
Garnish with fresh cilantro if desired and serve with the Greek yogurt.
