Preheat the oven to 200 degrees.
Peel the sweet potato and cut into strips about half an inch thick.
Spread the fries on a baking sheet lined with baking paper and sprinkle with salt. Bake the sweet potato fries in the oven for about 20 minutes until golden brown. Toss briefly in between so that all sides get crispy.
Meanwhile, peel the onion and cut into half rings. Wash the tomato and cut into slices.
Heat a grill pan over medium-high heat and grill the portobello for about 5 minutes per side or until soft.
Cut a slice of halloumi, brush with a little olive oil and grill on both sides until it has a nice grill mark. If necessary, season with salt and pepper.
Cut open the sandwich and top it as follows: start with the portobello and halloumi, then top this with the tomato and onion and finally some lettuce.
Serve the burger along with the sweet potato fries.
