Omelet with tomato, feta and bread

Salt 1 pinch (1 gram)
Pepper 1 pinch (1 gram)
Cherry tomato 6 pieces (60 grams)
Parsley, flat, fresh 5 grams
Olive oil (for frying) 1 tablespoon (10 grams)
Feta, sheep's cheese 30 grams
Whole wheat bread 2 slices (70 grams)

Step 1

Wash the cherry tomatoes and cut them in half.

Step 2

Beat the eggs in a bowl with salt and pepper.

Step 3

Heat the oil in a skillet over high heat and add in the cherry tomatoes.

Step 4

Fry briefly and pour the egg mixture over the cherry tomatoes.

Step 5

Crumble the feta over the top and cook the omelet over low heat until solidified.

Step 6

Top the sandwich with the omelet and garnish with fresh parsley if desired.
