Preheat the oven to 200 degrees and line a baking sheet with baking paper.
Scrub the sweet potatoes well under the tap and then prick them several times with a fork. Place the sweet potatoes on the baking sheet and roast for 45 minutes until tender.
Meanwhile, cut the olives and sun-dried tomato into small pieces.
Peel and halve the avocado and mash the flesh in a bowl with a fork.
Cut the sweet potatoes half open and place the arugula in here.
Top with olives, sun-dried tomato, avocado and sprouts, if desired. Sprinkle with salt and pepper as desired.
