Preheat the oven to 200 degrees.
Peel the sweet potato, cut into equal pieces and cook for 10 to 12 minutes until tender.
Peel and chop the onion.
Heat the olive oil in a frying pan and sauté the onion. Add the minced meat and fry until loose. Season with salt and pepper as desired.
Drain the sweet potato and collect some of the cooking liquid. Using a masher, mash the potatoes into a puree. Add the cooking liquid and mustard.
Drain the sauerkraut and divide between a baking dish. Spoon the minced meat and finally the sweet potato puree on top.
Bake for 20 minutes in the oven at 200 degrees.
