Ingredient

⅔ cup mashed avocado

Place the avocado and a pinch of sea salt in a food processor and pulse a few times to mix.

Place the chocolate chips in a small microwave-safe bowl and heat in the microwave for 30 seconds. Stir, then heat for an additional 20 seconds or until the chocolate chips are fully melted. (Alternatively, you can melt the chocolate using a double boiler).

Pour the melted chocolate into the food processor with the avocado and pulse until the mixture is fully blended and the avocado is no longer visible. If you don't have a food processor, you can mash the avocado with a fork and mix it with the chocolate until smooth and free of lumps.

Refrigerate the truffle mixture for 30 minutes to chill.

Once the mixture has firmed up, remove it from the fridge and shape the truffles. Use a tablespoon or small cookie scoop to portion the mixture and roll it into 2.5 cm balls. You should make about 20 truffles.

Pour cocoa powder into a shallow bowl and roll each truffle until fully coated. Place them on parchment paper and refrigerate until ready to serve.
