Preheat the oven to 180 degrees and line a muffin tin with 6 muffin tins.

Beat the eggs in a bowl and mix in the tomato paste, salt and pepper.

Peel and dice the onion and finely chop the garlic. Wash the bell pepper and cut into small cubes.

Heat a little oil in a frying pan and fry the onion in it.

Add the garlic and the minced meat and fry it loose. Season with cumin, salt and pepper.

Then add the bell pepper and spinach and fry briefly.

Remove the pan from the heat and add the minced meat-vegetable mixture to the egg mixture. Stir well.

Pour the egg mixture into the muffin tins and bake in the oven for about 15 to 20 minutes. The muffins are done when a skewer comes out clean.

You can keep the muffins in the fridge for a few days.
